Aunt Chris's Yam Marshmallow Casserole

  • 2 lbs. yams, peeled and cut into chunks
  • salt
  • 1/4 cup of firmly packed brown sugar
  • 1 teaspoon of cinnamon
  • 1 teaspoon of nutmeg
  • 1 tablespoon of melted butter
  • 1 1/2 cups of miniature marshmallows, divided

*Cook the yams in boiling salted water until tender, drain and mash to equal 3 cups

*Blend yams with brown sugar, cinnamon, nutmeg, and butter.  Mix in half the marshmallows

*While yams are cooking, preheat oven to 350 degrees

*Turn the mixture into a greased  baking dish. Top with remaining marshmallows

*Bake until mixture is puffy and marshmallows are delicately browned, about 25 minutes.
