Grandmom Coskey's Pineapple Cheese Cake

Dough:

  • 2 cups flour

  • 1/3 cup sugar

  • 1/4 lb. butter

  • 2 eggs

  • 1 tsp. baking powder


  • 1 large can crushed pineapples (not part of the dough mixture)

Filling:

  • 3 large, softened packages cream cheese

  • 1 cup sugar

  • 1/4 cup flour

  • juice of 1 lemon

  • 2 tsp vanilla

  • 3 cups milk


  • Cinnamon (to sprinkle on cake when done)


*Pre-heat oven to 350 degrees

*Mix together flour, sugar, butter, eggs and baking powder until a soft dough  is formed and then press into the bottom and up sides of oblong pan.

*Open a can of pineapples (crushed) and drain well, then spread over crust.

*In a separate bowl mix well the ingredients for the filling, the pour over pineapples
 

*Bake at 350 degrees for 45 min to one hour 'til firm, remove from oven and sprinkle with cinnamon (and when cool, be sure to have that special small spatula that she always removed the slices with!)
