Grandmom Coskey's Cottage Cheese Pie

  • 1 lb. of small curd creamed cottage cheese
  • 2 tbsp. of corn starch

  • 3/4 cup of sugar

  • 2 eggs

  • 2 tbsp butter

  • 1/4 cup milk

  • Cinnamon

  • 1 pie crust (your own recipe or already made)


*Pre-heat oven to 400 degrees

*Place cottage cheese into a bowl and add corn starch and sugar and mix well

*Separate 2 eggs, put yolks into first mixture and beat again, then in a separate bowl beat the egg whites until foamy and set them aside.

*To the cheese mixture, add 2 tbsp of butter and a quarter cup of milk---mix well, then fold in  the beaten egg whites that you set aside

*Sprinkle the top with cinnamon and bake in a 400 degree oven for 10 min., then reduce heat to 300 or 325 degrees till done (firm) this should take about 30-40 min.
